Select a quality pan — ideally cast iron — that can fit all your chestnuts in one layer on the bottom, plus a pan lid.

STEP 1.

Step 2: “Score” each chestnut by carefully cutting an X in the top/round side of the shells with a chef or paring knife. This keeps the nuts from exploding while cooking.

STEP 2.

Place chestnuts in COVERED pan with other ingredients: salt, butter, and a bit of water over medium heat.

STEP 3.

Cook covered for 10 minutes, shaking pan every minute or so to ensure even heating.

STEP 3.

After 10 minutes, the water will evaporate and/or absorb into chestnuts, then the inside of your pan will start getting a bit smoky.

STEP 4.

 This helps replicate the smoky wood-fired flavor of an open fire! Shake the pan constantly at this point.

STEP 4.

Uncover pan. Stir nuts and/or shake pan constantly while uncovered on heating element for 2 minutes.

STEP 5.

Remove pan from heat, and place lid back on pan. Let chestnuts cool for 5 minutes with the lid on.

STEP 6.

Remove the lid and let chestnuts cool down to eating temperature. Serving them in the cast iron skillet scored-side-up makes a unique presentation.
